What are Hand Pies?

Hand pies are basically just mini pies. You can make them with any filling (obviously I LOVE apples). You can try these with blueberry, strawberry or peach compote. I had developed this recipe from my Apple Pie Recipe. I have been wanting to make mini pies since summer! It was perfect and sooo delicious.You have got to try these!

The dough

This dough is easy to make, but can be very finicky. I recommend watching my video and follow the instructions exactly. Please do not alter the measurements or each ingredient (except for slightly more water or flour) because it may ruin the balance. I also want to thank my grandmother for the apple pie recipe (which I had adapted for this recipe).

The filling:

This apple filling is just like a normal apple pie. It is exactly the same as my Apple Pie recipe. There is lots of leftover filling which is why I decreased the amount. (Personally, I love it when there is extra compote! See my note for what to do with it)

Alternate Shapes

You can shape the hand pies whatever shape you want. I just used a large cup. I don’t suggest anything smaller than 3 inches in diameter because you can’t fit enough filling in a pie that small. You can also shape into rectangles.

Ingredients
  

  • 5 apples
  • 1/4 cup granulated sugar
  • 3 tbsp lemon juice
  • 1/2 tbsp ground cinnamon
  • pinch of salt to taste
  • 2 tbsp all-purpose flour (tbsp should be heaping)

For the dough:

  • 2 1/2 cup all-purpose flour plus more as needed, sifted
  • 1 cup unsalted butter cubed and cold (but knead-able)
  • 6-7 tbsp ice water
  • 1/4 tsp salt
  • 1 stired egg
  • sanding sugar

Instructions
 

  • Mix the butter and flour until it is a fine powder, with grains
  • add cold water and do not Knead a lot! only until you get a satisfactory dough!
  • then separate into 2 balls, one big and one small
  • Separate the dough into 2 balls one big and one small
  • Leave the dough in a bowl for about an hour

How to make the filling

  • shave apple, add lemon zest and then add the sugar and the salt and lemon juice as well as flour. mix well (I recommend doing this a day ahead or 3 hours ahead) refrigerate for 3 hours-one day
  • Rolll out the dough until it is about 1/8 of an inch thick. Then cut it into 3-3.5 inch circles and top with some apple filling and top with another top layer. Press the layers with a fork and brush with an egg. Sprinkle with some sanding sugar. Bake at 375°F or 190°C for 28-38 minutes or until the top is golden brown.

Notes

Extra Filling: Use on ice cream, with cookies, oatmeal, yogurt, or even just by itself.
