Pesto Pasta and Spicy Chicken

Ingredients
Pesto Pasta
- 500 mg pasta
- 1 and 1/2 cups premade pesto
- 1/2 medium onion finely diced
- 2 garlic teeth made into paste
- 4 tbsp extra virgin olive oil
- 2 tsp salt
Chicken
- 1 chicken breast
- 2 tsp paprika
- 1 tbsp lemon salt
- 2 tsp salt
- 1 tsp ground pepper
- 1/2 tsp cumin
- 3 tbsp red chilli pepper paste or shatta (if too thick, thin out with 1 tbsp of water and a pinch of cornstarch)
- 1/2 medium onion finely diced
- 4 tbsp extra virgin olive oil add more as needed
Instructions
- In a pot, boil your pasta for 8-11 minutes, or until the pasta is cooked through.
- In a medium pan, sauté your onions and garlic in your olive oil until golden. Add in your pesto and bring to a light boil. Pour your new, flavorful sauce into your cooked pasta and stir to combine. Make sure all the pasta is lightly coated.
- Slice your chicken in thin tenders
- In a large pan, sauté half your finely diced 1/2 of a onion with your lemon salt, paprika, pepper paste, cumin, salt, pepper, and olive oil until the onion is caramelized. Spread the thick sauce evenly in the pan, and set the heat on medium-high. Cook your tenders on the sauce, flipping only once. Cook for about 1.5 minutes on each side.
- Top your pasta with chicken and the remaining sauce. Serve hot-warm, and Enjoy!
