The Easiest Baked Cheese Spinach Dip

Ingredients
  

  • 3/4 cup cream cheese
  • 1/4 cup greek yogurt
  • 3-4 cups fresh spinach
  • 1 cup shredded cheeses of choice I prefer English cheddar, mozzarella, and gouda .
  • 1/2 cup mayonaise
  • 1/4 cup olive oil extra virgin (Spanish or Italian of high quality for flavor)
  • 1/2 small onion finely diced
  • 2 cloves garlic mashed
  • extra olive oil for cooking
  • 1 tbsp lemon salt
  • 1 tbsp buttery steak (or SPG) spices
  • 2 tsp paprika
  • 2 tsp kosher sea salt
  • 2 tsp ground pepper

Instructions
 

  • Preheat your oven to 400℉ or 200℃ and prepare a 6in ceramic circular pan.
  • In a pan, sauté your spinach with olive oil until all the water has evaporated and the spinach is reduced to 1/3 its original amount. Strain the spinach in a sieve to remove all water.
  • Sauté your onions and garlic until golden brown and slightly caramelized. Add in your pepper, salt, paprika, lemon salt, and other spices of choice. Then, remove from heat and add to your spinach. Stir to combine. Allow your spinach mixture to cool.
  • In a small bowl, combine your shredded cheese, yogurt, cream cheese, olive oil, and mayonnaise. Stir to combine. Add your spinach mixture and stir till combined. Add to your ceramic pan.
  • Bake for 30 minutes or until golden brown.
  • Serve warm and enjoy with chips.
  • You can also use this recipe as a spread, sandwich base, or salad dressing.
