  • 1 and 3/4 cups granulated sugar
  • 3/4 cup all-purpose flour
  • 3/4 cup cocoa powder
  • 1/2 cup chocolate chips
  • 1 tsp salt
  • 1 large eggs
  • 1/2 cup olive oil
  • 3 tbsp water
  • 1 tsp vanilla
  • 1 tsp ground coffee optional


  • Preheat the oven to 350℉ or 180℃ and prepare an 8×8 deep baking pan with parchment paper and butter.
  • In a small bowl, combine your flour, sugar, salt, cocoa powder, coffee grounds (optional), and chocolate chips.
  • In a larger bowl, whisk together your oil, water, eggs, and vanilla until smooth.
  • Pour your dry ingredient mixture into your wet one and stir to combine. The batter should be thick and there should be no pockets of flour.
