Creamy One-Pot Mushroom Pasta
Ingredients
- 2 tbsp olive oil
- 1/2 large onion cubed
- 6 cloves of garlic minced
- 1 hot chili pepper chopped
- 3 cups of water
- 2 and 1/2 cups whole milk
- 2 cups of button mushrooms sliced
- 4 cups dry Gemelli pasta or pasta of choice
- 1/3 cup chopped cherry tomatoes
- 1 tbsp soy sauce
- 1/2 tbsp salt
- 1/2 tbsp pepper
- 3 cups fresh spinach chopped
Instructions
- Heat a large pot of medium-high heat. Add the oil, chili pepper, onions, garlic, salt, and pepper. Cook until the onions and garlic are a golden brown. (5 minutes or so)
- Add all of the remaining ingredients except for the spinach and tomatoes. Cover the pot, and cook on medium-high for 15-20 minutes or until the pasta is cooked and the sauce is thickened.
- Add in your spinach and tomato. Stir to combine. Serve warm.
