The Best Chicken Greek Salad
Ingredients
Chicken Marinade
- 1/2 pound chicken cubed
- 1/2 cup greek yogurt
- 2 tsp turmeric
- 2 tsp pepper
- 2 tsp kosher salt
- 2 tsp paprika
- 2 tsp oregano
Salad Ingredients
- 1/2 small red onions sliced into thin, long strips
- 10 kalamata olives pitted
- 5 cherry tomatos sliced into half moons
- Roughly chopped head of lettuce
- 1/4 cup shredded English cheese or Parmegiano
- 1 cup spinach leaves
Dressing Ingredients
- 1/4 cup freshly squeezed lemon juice
- 2 tsp kosher salt
- 1 tsp ground pepper
- 1/4 cup extra virgin olive oil Spanish or Italian (Or Palestinian?)
- 1 tsp oregano
Instructions
- Marinate your chicken in the marinade ingredients for at least 10 hours. Sauté until golden and fully cooked through. This should take 10 minutes. Set aside to cool.
- Add all your chopped salad ingredients and toss lightly. Sprinkle with cheese and chicken. You can choose to shred your chicken.
- Pour your dressing onto the salad before serving. Enjoy!
