Chicken Marinade
- 1/2 pound chicken cubed
- 1/2 cup greek yogurt
- 2 tsp turmeric
- 2 tsp pepper
- 2 tsp kosher salt
- 2 tsp paprika
- 2 tsp oregano
Salad Ingredients
- 1/2 small red onions sliced into thin, long strips
- 10 kalamata olives pitted
- 5 cherry tomatos sliced into half moons
- Roughly chopped head of lettuce
- 1/4 cup shredded English cheese or Parmegiano
- 1 cup spinach leaves
Dressing Ingredients
- 1/4 cup freshly squeezed lemon juice
- 2 tsp kosher salt
- 1 tsp ground pepper
- 1/4 cup extra virgin olive oil Spanish or Italian (Or Palestinian?)
- 1 tsp oregano
Marinate your chicken in the marinade ingredients for at least 10 hours. Sauté until golden and fully cooked through. This should take 10 minutes. Set aside to cool.
Add all your chopped salad ingredients and toss lightly. Sprinkle with cheese and chicken. You can choose to shred your chicken.
Pour your dressing onto the salad before serving. Enjoy!
