Gooey French Apple Cake

Ingredients
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup butter softened/room temperature
- 2/3 cup granulated sugar
- 2 tsp vanilla
- 1/2 tsp ground cinnamon
- 3 tbsp apple juice or sparkling apple cider
- 3 crisp baking apples
- 1 tbsp powdered sugar
- Extra cinnamon and sugar
Instructions
- Preheat your oven to 350℉ or 180℃, and prepare a 8inch round cake pan with butter and parchment paper.
- In a small bowl, sift your flour in. Then, add your baking powder, cinnamon, and salt. Set aside.
- Peel your apples and cut them into small, thin slices. Set aside.
- In a medium-sized bowl, beat your butter and sugar until light and fluffy. Add in one egg at a time, beating for a minute at each addition. Add your vanilla extract and apple juice/cider.
- Add your dry mixture to the wets and fold until combined. The batter should be very thick. Add half the batter to your baking pan. Add a thin layer of apple slices (feel free to be artistic). Sprinkle the layer with granulated sugar and cinnamon. Then, add the rest of your batter and ensure all the apples are covered. Sprinkle your cake with more granulated sugar and cinnamon, this is vital for ensuring the cake browns beautifully.
- Bake for 40 minutes. Cool for 15 minutes. Serve warm with powdered sugar, ice ream, or whipped cream. Enjoy!
