These are so easy and require no more than a bowl and no electric mixer! It is so easy and simple and is extremely fudgy with a strong yet delicious chocolate flavor.

- 1 1/2 cups  all-purpose flour
- 1/2 cup cocoa powder  dutch processed 
- 2/3 cup  granulated sugar
- 1 TBSP  baking powder yes, a whole tbsp
- 1/2 tsp salt
- 1 large egg, room temperature
- 1 cup whole milk
- 2 tsp vanilla extract
- 1/2 cup vegetable oil or canola oil
- 1/2 cup chocolate chips + more for topping if desired
- Preheat the oven to 410°F or 210°C and prep a muffin tin.  
- In a bowl combine the flour, baking powder, sugar, cocoa and salt. Sift. 
- In a smaller bowl combine the oil, egg, vanilla. Stir until fully combined. Add in your milk and stir.  
- Add the wet mixture into the dry adn stir until combines. 
- Add the batter into the tins. Fill them up all the way. You can make 10-12 muffins with this recipe. Bake for 15 minutes then turn down the heat to 350°F of 175°C and bake for another 5 minutes.
