  • 3 cup all purpose flour
  • 3/4 cup lukewarm water
  • 1/4 cup milk warm
  • 2 tsp granulated sugar
  • 1 tsp salt
  • 3 tbsp olive oil
  • 2 tsp instant yeast

Cheese Filling

  • 1/2 cup mozzarella shredded
  • 1/2 cup feta crumbled

  • Activate the Yeast: Combine warm water, warm milk, sugar, and instant yeast in a bowl. Stir and let it sit for 2–3 minutes.
  • Make the Dough: In a large bowl, mix the flour and salt. Gradually add the yeast mixture and olive oil, mixing until a dough forms. Knead on a floured surface for about 8–10 minutes until smooth and elastic.
  • Create Cheese Mixture: evenly combine shredded cheeses of choice.
  • First Rise: Place the dough in a lightly oiled bowl, cover with a damp towel or plastic wrap, and let it rise for 30 minutes in a warm spot.
  • Divide and Shape: Divide the dough into 6–8 equal pieces. Roll each piece into a ball and stuff the ball with cheese mixture, then flatten into circles about 1/4 inch thick. Allow to rise/rest again for 30 more minutes.
  • Cook the Pita: Heat a non-stick skillet or cast-iron pan over medium-high heat. Cook each pita for 1–2 minutes on each side until puffed and lightly golden. Cook on each side 3-4 times. Press down gently with a spatula if needed for even cooking.
