Creamy One-Pot Mushroom Pasta

This easy pasta comes together COMPLETELY in one large pot! You will love the creamy pasta sauce that comes together using simple ingredients and yields amazing results. Ingredients
  

  • 2 tbsp olive oil
  • 1/2 large onion cubed
  • 6 cloves of garlic minced
  • 1 hot chili pepper chopped
  • 3 cups of water
  • 2 and 1/2 cups whole milk
  • 2 cups of button mushrooms sliced
  • 4 cups dry Gemelli pasta or pasta of choice
  • 1/3 cup chopped cherry tomatoes
  • 1 tbsp soy sauce
  • 1/2 tbsp salt
  • 1/2 tbsp pepper
  • 3 cups fresh spinach chopped

Instructions
 

  • Heat a large pot of medium-high heat. Add the oil, chili pepper, onions, garlic, salt, and pepper. Cook until the onions and garlic are a golden brown. (5 minutes or so)
  • Add all of the remaining ingredients except for the spinach and tomatoes. Cover the pot, and cook on medium-high for 15-20 minutes or until the pasta is cooked and the sauce is thickened.
  • Add in your spinach and tomato. Stir to combine. Serve warm.
