Moist Chocolate Muffins

These are so easy and require no more than a bowl and no electric mixer! It is so easy and simple and is extremely fudgy with a strong yet delicious chocolate flavor.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder dutch processed
  • 2/3 cup granulated sugar
  • 1 TBSP baking powder yes, a whole tbsp
  • 1/2 tsp salt
  • 1 large egg, room temperature
  • 1 cup whole milk
  • 2 tsp vanilla extract
  • 1/2 cup vegetable oil or canola oil
  • 1/2 cup chocolate chips + more for topping if desired

Instructions
 

  • Preheat the oven to 410°F or 210°C and prep a muffin tin.
  • In a bowl combine the flour, baking powder, sugar, cocoa and salt. Sift.
  • In a smaller bowl combine the oil, egg, vanilla. Stir until fully combined. Add in your milk and stir.
  • Add the wet mixture into the dry adn stir until combines.
  • Add the batter into the tins. Fill them up all the way. You can make 10-12 muffins with this recipe. Bake for 15 minutes then turn down the heat to 350°F of 175°C and bake for another 5 minutes.
