These are so easy and require no more than a bowl and no electric mixer! It is so easy and simple and is extremely fudgy with a strong yet delicious chocolate flavor.

- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder dutch processed
- 2/3 cup granulated sugar
- 1 TBSP baking powder yes, a whole tbsp
- 1/2 tsp salt
- 1 large egg, room temperature
- 1 cup whole milk
- 2 tsp vanilla extract
- 1/2 cup vegetable oil or canola oil
- 1/2 cup chocolate chips + more for topping if desired
Preheat the oven to 410°F or 210°C and prep a muffin tin.
In a bowl combine the flour, baking powder, sugar, cocoa and salt. Sift.
In a smaller bowl combine the oil, egg, vanilla. Stir until fully combined. Add in your milk and stir.
Add the wet mixture into the dry adn stir until combines.
Add the batter into the tins. Fill them up all the way. You can make 10-12 muffins with this recipe. Bake for 15 minutes then turn down the heat to 350°F of 175°C and bake for another 5 minutes.
